Our Philosophy on Food

We strive to use the freshest ingredients possible at all times, and to use recipes, not cans or boxes. Most of everything we make is from scratch, and if it isn’t we are betting you will think it is.  The Ultimate goal of Steve and his staff is to produce restaurant quality food rather than your typical “Camp Food” and have you leaving surprised at how great the food was, or upon returning, an anticipation of great food.  Below is a sample of just some of the things we offer.  Steve is more than capable at accommodating any of your dietary expectations.  Our email is  Bon Appetite!

Meal times: 8:00am, 12:00pm, 5:30pm



All breakfasts served with milk, juice, fresh fruit, yogurt, granola, cold & hot cereal.

  • Scrambled Eggs: plain or with cheese, grilled potatoes, one bread & one meat.
  • Frittata: veggie or meat, grilled potatoes, one bread & one meat.
  • Eggs Benedict or Florentine: grilled potatoes & one meat.
Whole Wheat Pancakes: butter, syrup, one meat.
  • French Toast: butter syrup, one meat. *Breakfast Burritos; eggs, cheese, veggies, salsa.
  • Breakfast Sandwich; eggs & cheese w/ham or turkey on toast, bagel or muffin.

*Meat Choices: bacon, ham, pork or turkey sausage, links or patty.

Bread: bagels, English muffins, biscuits,croissants, toast, mini muffins, cinnamon rolls or Danish.


Most lunches served with potato, pasta or green salad. All with water & punch or iced tea.

  • Fajitas: chicken or beef, tortillas, cheese, peppers & onions and all the things to put on, rice, beans, chips & salsa.
  • Sandwiches with soup or salad: Choice of home made soup or salad. Sliced cheeses, ham, turkey, beef, salami, lettuce, tomato and onion, condiments, chips, bread.
  • Grilled Cheese Sandwiches: with soup & salad
  • Veggie Quesadilla: with soup & salad
  • Baked Potatoes w/Toppings: with soup or salad.  Cheese, sour cream, butter, broccoli, mushrooms, bacon, cornbread or rolls.
  • Pasta with Red Sauce: Meatballs or sausage, garlic bread.
  • Pizza: Cheese, meat & veggie.
  • Hamburgers: Beef or turkey. Buns, condiments, lettuce, tomato & onions, sliced cheese, fries or chips. Vegetable patties or Boca burgers(vegan) available on request.
  • Grilled Chicken Breast Sandwich: Buns, condiments, lettuce, tomato & onions, sliced cheese, fries or chips. Vegetable patties or Boca burgers(vegan) available on request.
  • BBQ Beef Sandwich: (Pork or chicken) shredded beef, b-b-q sauce, fresh rolls, diced onions, shredded cheese, cole slaw, fries or chips.
  •  Hot Dogs: (all beef) Traditional or w/Chilli. Cheese, onion, relish, mustard, ketchup, mayo, chips or fries.


All dinners served with green or spinach salad, vegetables, home made bread & butter & dessert. All dinners (except pasta) get a choice of; mashed, roasted or baked potatoes, brown rice or macaroni & cheese. Water & punch or iced tea & Dessert

  • Baked Chicken: many variations
  • Chicken Cattiatore: Chicken roasted with peppers, onions, tomatoes and garlic
  • Chicken Breast: char-broiled or baked
  • Roast Turkey Breast: with cranberry sauce
  • Beef Pot Roast: with gravy
  • Pork Roast or Chops:
  • Baked Ham:
  • Lasagna: Turkey or cheese, garlic bread
  • Pasta Primavera: Chicken & vegetables in a light cream sauce, garlic bread
  • Pasta with Red Sauce: Meatballs or sausage, garlic bread.
  • Chicken & Cheese Enchilada Casserole with Rice & Beans.
  • Stir Fry: Chicken & vegetables, Asian noodles & fried rice.
  • BBQ Pork Ribs: Country style or spare ribs, coleslaw, biscuits or cornbread. Baked or b-b-q beans if requested. *Meatloaf (turkey):Gravy.
  • Stew, Chilli or Soup: Biscuits, cornbread or rolls
  • Salmon, Mahi-Mahi, Trout, Rock Fish.

  • Cake, brownies, ice cream, apple strudel, pie cookies, ice cream sandwiches or bars

We are prepared to handle most dietary needs if you let us know in advance.
